Here’s a warming drink that will bring a little sunshine to any grey wintery day: Glowing Skin Chai Latte with Coconut Whipped Cream. It’s really rich and soothing to the belly, and can be helpful if you often suffer from bloating.

I love the unique flavor of chai spice in this warming latte. I used this Golden Chai Collagen made with pure collagen (marine) and a fragrant spice mix of ginger, turmeric, cinnamon and cardamom; spices that can contribute to a healthy gut, stable blood sugar levels and strong immune system.

Collagen is the main component of our bones, skin, ligaments and cartilage. It keeps our skin firm and smooth and can help to protect our bones and joints too. Our ancestors used to get collagen from bone broth (ex. homemade chicken broth), wild fish (cooked with the bones) … but nowadays our modern Western diet often lacks this important building block. That’s why I like to add it to smoothies, shakes and warming drinks.

Serve the chai latte as it is or make it extra fancy with freshly whipped (coconut) cream or frothed milk (see tips).

Glowing Skin Chai Latte with Coconut Whipped Cream (Better than Starbucks)

DIRECTIONS:

  1. Mix the bag of chai collagen with the almond or coconut milk (or other unsweetened milk of your choice) into a creamy chai latte with a blender or by vigorously shaking everything in a sealed glass jar or drinking bottle.
  2. I like to add MCT oil and a little keto sweetener or this vegan vanilla protein powder sweetened with stevia to balance the powerful flavor of the chai spice.
  3. Serve lightly heated or at room temperature. The warmer the chai latte, the faster the whipped cream will melt.
  4. For the coconut whipped cream topping: put the can of full-fat coconut milk (I use Amaizin coconut whipped cream) in the refrigerator the night before so the coconut cream hardens and separates from the coconut water.
  5. When properly chilled, remove the thick hardened coconut cream from the can and put it into a chilled mixing bowl (you can use the leftover coconut water in chia pudding or smoothies).
  6. Use a hand mixer to beat the chilled coconut cream on medium high for about 2 minutes until light and fluffy. It won’t be double in size like regular cream does, but it still gets nice and fluffy. Add keto sweetener or a few drops of stevia if you wish and continue beating until mixed. You could also add ½ teaspoon of pure vanilla extract.
  7. Top the chai latte with coconut whipped cream and a sprinkle of turmeric or chai spice.

JULIE’S TIPS & TRICKS:

  • For the picture we used a professional whipped cream dispenser with chargers to make the cream extra fluffy, but you could also just serve the chai latte with a few spoonfuls of lightly whipped coconut cream. It won’t be as airy, but it will taste amazing, nevertheless.
  • Feel free to replace the coconut cream with regular whipped cream if it doesn’t need to be dairy free/vegan.
  • Not in the mood for whipped cream? Serve the chai latte as it is or top it with foamed (plant-based) milk using a milk frother. Organic soy milk (keto friendly) and barista oat milk (richer in slow carbs) work best for maximum froth.
